  • ½ cucumber, diced
  • ½ red bell pepper, diced
  • A handful of fresh parsley, chopped

Method:

Combine the chicken with the lemon juice, oil, oregano, garlic, salt, and pepper in a plastic bag or covered container and marinate for 15 minutes. Grill for 5–6 minutes on each side over medium heat, or until the centre is no longer pink. Mix cooked quinoa with cucumber, bell pepper, parsley, and a squeeze of lemon juice. Whisk in the soy sauce, garlic, and ginger, and cook for an additional 2 minutes, or until the vegetables are tender-crisp. Serve immediately, either on its own or alongside fluffy brown rice.

3. Baked Mediterranean Chicken
